Instructions
  1. Sauté onions, celery, garlic, and bell pepper in a large stock pot over medium heat until softened and beginning to brown.
  2. Drain soaked cashews. Add cashews, nutritional yeast, onion mix from the pan, bouillon cube, salt and pepper, and four cups of water to a high-speed blender and blend until smooth.
  3. Add sliced mushrooms to the stock pot and sauté gently until fragrant and beginning to soften. Add the mixture from the blender and stir. Add another four cups of water to the blender and set to blend to pull creamy goodness from the sides and bottom of the blender. Add this water to the pot and stir. Bring soup to a simmer and serve immediately.
  4. Bring to a simmer and serve immediately.
Recipe Notes

This stuff is heaven in a bowl if you are a mushroom lover! Delicious with a crust of bread, a grain salad, and/or a green salad.
