Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Mix pumpkin puree with ginger syrup, pumpkin spice, salt, and vanilla, if using.
  2. Add pecans and rolled oats to create a firm batter.
  3. Form batter into 12 1 1/2-inch balls or 24 1-inch balls and then flatten with palms onto a cookie greased or non-stick sheet. Bake cookies for 15-20 minutes, until browning at the edges.
